How do I contact a real person for help?
Ebay sucks for help, everything is a defined option, and then you get a useless bot that also has defined questions and answers.
I ordered something but was then told the item was out of stock, then I noticed all the similar auctions went up in price! So obviously the same person.

If they've cancelled as 'out of stock' they've received a damaging defect against their account, you can also leave appropriate feedback.
