Change to postal service
I sold an item, printed the buyer selected postage label, but when I took it to the Post Office, they said it was too large for Royal Mail
So I paid for an Evri label and the item was sent. I see that it was delivered successfully, but the item tracking is still showing the info for the Royal Mail label I printed.
How do I change the service, or let Ebay know I used a different service?

You will have to wait for payment.
