Age Verification Listing & Posting a Private Sellers Guide
This is what I found that works:
When listing a bladed item, chose a category that has the word knife, saw, scythe etc. in its title, this seems to remove "Simple Delivery" allowing you to select age verification postage.
Be aware that ebay only offers UPS as an option after the item is purchased (£11+) not the Royal Mail service you selected, to use Royal Mail Age Verification you will need to open a Royal Mail "Click & Drop" account and link it to your ebay account, which only takes about 5 minutes, and handle the label purchase there.
You will also need a printer to print the label, as the QR Code you would normally get sent for getting your label printed at the post office is "unavailable to view"
Also don't forget to turn off "Collection" as an option.

The comment about Collection, it does not need turning off it is just not available for Bladed Items.
