Tax on goods bought in the UK sent to UK address?
I just noticed I paid VAT on 3 items I bought in Birmingham and were delivered to Cambridge.
I paid 3x for postage but seller combined and dispatched them in one (which means I overpaid 66% for posting).
Is this how ebay is working nowadays or am I missing something?

If you bought from a VAT registered business seller - then you would pay VAT.
If you bought from a private seller then you would still be charged VAT on the Buyer Protection Fee and potentially the postage (if simple delivery)
With regards the postage - if you purchased every item separately and were presented with three separate postage charges - then you can't really complain. You could have checked out all items at the same time (this can also be done if say winning separate auctions) and been charged one postage cost.
You could ask the seller for a postage refund - though they don't have to do this.
