If sellers are selling the PS5 consoles at inflated prices are they also offering to cover the warranty for the item?

They are only selling them at inflated prices if buyers are willing to pay.

Even if they say there is a warranty that has nothing to do with ebay and you may not be able to enforce one if they item goes wrong.

It would be between yourself and the seller

We get many coming on here with warranties that are worthless

Some warranties are not allowed to be passed on
